Better Than A Snickers Bar Slice
Ingredients:
Chocolate Layer:
- 1 Cup Niugini Coconut Oil
- 125 grams Loving Earth Cacao Butter
- ½ tbs Loving Earth raw cacao powder
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- ¾ cup Loving Earth raw cacao powder
Nut Layer:
- 1/2 cup walnuts
- ½ cup dry roasted peanuts
- 2 tbs desiccated coconut
- 1 tablespoon Niugini Coconut Oil
- 7 pitted medjool dates
- 1 teaspoon vanilla extract
- ¼ cup Loving Earth Cacao Nibs
Peanut Caramel Layer:
- 1/2 cup peanut butter
- 1 tablespoon Niugini Coconut Oil
- 1 tablespoon maple syrup
Directions:
Bottom Chocolate Layer
- Melt coconut oil and cacao butter in the microwave or in a pot
- Add cacao powder and vanilla and whisk until combined
- Pour half into lined 8×8 inch tray and place into the freezer until set
Nut Layer
- Place all ingredients (except peanuts) in your food processor or Thermomix and whizz until combined and sticky
- Add peanuts and whizz for a few second so they are still a little chunky
- Put on top of the chocolate layer, press down firmly and set aside while you make the peanut caramel layer
Peanut Caramel Layer
- Combine all ingredients in your Thermomix, food processor or by hand
- Pour on top of the nut layer
- Place in the freezer until it is firm
Top Chocolate Layer
- Pour over the remaining chocolate and place in the fridge to set
- Once set remove from the freezer and slice into portions with a hot knife
- This is best stored in the freezer as it does melt quickly
