Caramel Coconut and Pecan Slice

Ingredients

Base

  • 1.5 cups raw cashews
  • 1/2 cup shredded coconut
  • A big pinch pink salt
  • 7 medjool dates, pitted

Filling

  • 1/2 cup tahini
  • 1/2 cup maple syrup or sweetener of choice
  • 1/2 cup melted coconut oil
  • pinch of pink salt
  • 1 tablespoon peanut butter
  • 1 tsp vanila extract

Topping

  • 1/2 cup shredded coconut
  • 1/4 cup pecan nuts
  • A big pinch of pink salt

Directions

  1. Add all base ingredinets into your high speed blender, food processor or Thermomix and mix until it is sticky  and can be pressed together between your fingers (TM Speed 8, 20 secs)
  2. Press into a slice tin that has been lined with baking paper
  3. Place in the freezer
  4. Add all filling ingredients into your high speed blender, food processor or Thermomix and mix until it is smooth (TM Speed 5, 10 secs)
  5. Pour on top of the base and set aside
  6. Sprinkle nuts and coconut on top of the caramel
  7. Place in the freezer to set for a couple of hours then slice.
