Crunchy Caramel Cacao Cups

I recently bought some Loving Earth Chocolate Coated Cacao Nibs and I have to say they are pretty damn delicious!!! I may have almost devoured a packet which making these Caramel Cacao Cups.

 

Ingredients

 

Chocolate

Caramel

  • 3/4 cup dates, soaked in hot water for 10 mins and then drained
  • 2 tbls peanut butter
  • 1 tbls coconut oil
  • 1/2 tsp salt
  • 1/3 cup water

Topping

  • 1/2 packet of Loving Earth Chocolate Coated Cacao Nibs
  1. Combine dark chocolate and coconut oil together in a bowl
  2. Spoon half of it into silicone cupcake moulds or paper cupcake liners and place in the freezer to set
  3. Add all caramel ingredients to your blender, food processor or Thermomix and blitz until smooth and combined (TM speed 5, 1 minute). You may need to stop and scrape down the bowl a few times
  4. Pour on top of the chocolate base
  5. Pour over remaining melted chocolate mixture and sprinkle with chocolate coated cacao nibs
  6. Place in the freezer to set for 30 minutes
