Chruncy Caramel Cacao Cups
I recently bought some Loving Earth Chocolate Coated Cacao Nibs and I have to say they are pretty damn delicious!!! I may have almost devoured a packet which making these Caramel Cacao Cups.
Ingredients
Chocolate
- 1 block dark chocoalte (I use Loving Earth Mylk or Dark Choc), melted
- 1/4 cup coconut oil, melted
Caramel
- 3/4 cup dates, soaked in hot water for 10 mins and then drained
- 2 tbls peanut butter
- 1 tbls coconut oil
- 1/2 tsp salt
- 1/3 cup water
Topping
- 1/2 packet of Loving Earth Chocolate Coated Cacao Nibs
- Combine dark chocolate and coconut oil together in a bowl
- Spoon half of it into silicone cupcake moulds or paper cupcake liners and place in the freezer to set
- Add all caramel ingredients to your blender, food processor or Thermomix and blitz until smooth and combined (TM speed 5, 1 minute). You may need to stop and scrape down the bowl a few times
- Pour on top of the chocolate base
- Pour over remaining melted chocolate mixture and sprinkle with chocolate coated cacao nibs
- Place in the freezer to set for 30 minutes
