Coconut and Red Curry Lentil Soup

Nothing beats a bowl of warm soup on a cold winters day!! Not to mention it is also super nutritious, healthy and filling.

This soup is budget friendly, tasty and will be sure to fill your bellies.

 

Ingredients

  • 2 table spoons of Red Curry Paste
  • 1 litre vegetable stock. ( For Thermomix owner- I use 1.5 tbs stock concentrate and 1L of water)
  • 400ml coconut milk
  • 400g can of diced tomatoes
  • 1.5 cups red lentils
  • 3 handfuls of spinach, chopped

Thermomix Method

  1. Add all ingredients to the mixing bowl.
  2. Set for 15 minutes, 110 degree, reverse speed 1
  3. Pour into bowls and top with chopped spinach before serving

Stove Top Method

  1. Add all ingredients to a large pot
  2. Bring to the boil and then turn down to simmer for approx 15 minutes or until the lentils are cooked.
  3. Give it a stir every so often to stop it sticking
  4. Pour into bowls and top with chopped spinach before serving
