Healthy Paleo Banana Bread

While traditional banana bread is often touted as a healthy breakfast/morning tea option, it is generally full of sugar with some recipes having 1-2 cups of white or brown sugar added. That means that the average piece will have around 8-10 teaspoons of added sugar!!!!

This healthy banana bread recipe can be mixed and in the oven within a matter of minutes.  It is paleo friendly and is free of gluten, nuts, dairy and refined sugar.

It is perfect to slice up and store individually in the freezer and being nut free the kiddies will love having a piece in their school lunchboxes.

Ingredients

Method

  • Preheat oven to 180 degrees
  • Put all ingredients into the Thermomix or food processor and whizz until smooth.
  • Pour into a lined loaf tin
  • OPTIONAL- Sprinkle with cacao nibs, sliced banana, coconut and buckinis
  • Bake for 45 minutes or until a skewer inserted in the middle comes out clean *
  • Allow to cool for 5 minutes in the pan and then transfer to a cooling rack
  • When cool, place in an airtight container and store in the pantry.

*If the loaf it getting too golden just cover with a piece of alfoil and continue to bake.
