Mini Plum Pudding Bliss Balls

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup dessicated coconut
  • 2 tablespoons raw cacao powder
  • 6 medjool dates , pitted
  • 1/4 cup sultanas
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla extract
  • A pinch of Himalayan salt

Topping

  • 1/4 cup coconut butter, see note below to make it yourself
  • 2 tablespoons goji berries
  • 1 tablespiin pumpkin seeds

Method

  • Add all ingredients to your Thermomix or food processor and whizz until combined and sticky
  • Roll into balls
  • Spread a little coconut butter over the top of each ball and top with a goji berry and two pumpkin seeds. If the coconut butter is hard place it over a bowl of hot water to warm up a little.
  • Place in the freezer to set for 1 hour
  • Store in the fridge

Note

To make coconut butter simply add 500g dessicated coconut to your Thermomix or food processor and mix on the highest speed until smooth and creamy. This will most likely take a few minutes. (TM Speed 10, 2 mins). Pour into a jar and store in the cupboard for up to 3 months.
