Sweet Potato and Brocolli Frittata

I am always trying to find way to jam more vegetables in the food I serve for myself and my family. Fritatta does just that and is a great way to use up veggies in your fridge that are starting to look a little sad.

As a mum I don’t want to be cooking different meals for everyone and these mini sweet potato and broccoli frittata are a hit with my 9 month old son,myself and my partner. Happy Days!!!!

Full of protein, super filling and yummy…. The mini frittata’s are great for breakfast, lunch or dinner and even better you can freeze them too.

 

Ingredients

  • 400g sweet potato, peeled
  • 150 broccoli
  • 1 garlic clove
  • 1 tsp mixed Italian herbs
  • 4 eggs

Thermomix Method

  1. Preheat oven to 170 degrees
  2. Chop sweet potato roughly and add to the bowl with the broccoli. Whizz for 20 seconds on speed 4.5
  3. Add in the rest of the ingredients and whizz for 30 seconds on reverse speed 3
  4. Pour into greased mini muffin pans
  5. Place into the oven and cook for 20 mins or until set
  6. Remove from oven and allow to cool in the tray for 5 mins before taking out of the pan

Non Thermomix Method

  1. Preheat oven to 170 degrees
  2. Grate sweet potato, set aside
  3. Chop broccoli as finely as possible, set aside
  4. Beat eggs until nice and fluffy
  5. Combine all ingredients in a bowl
  6. Pour into greased mini muffin pans
  7. Place into the oven and cook for 20 mins or until set
  8. Remove from oven and allow to cool in the tray for 5 mins before taking out of the pan
