Overnight Banana, Cinnamon and Coconut Oats

Overnight Oats

We all know that breakfast is the most important meal of the day however with the super busy lives we lead it is not always possible to sit down to a healthy meal first thing in the morning. These overnight oats are perfect to prepare the night before and grab as your running out the door the next day. Or if your like me you could eat them for breakfast, lunch or dinner really!!!!

 

Ingredients

Serves 1

  • 1/2 cup oats (I use Bobs Red Mill Gluten Free Oats)
  • 1/2 cup coconut milk
  • 1/2 cup Natural Raw C Coconut Water
  • 1 medjool date, pitted and chopped
  • 1 tsp maple syrup or sweetener of choice
  • 1/2 tsp cinnamon
  • A few walnuts chopped
  • 1 banana, sliced
  • Bee pollen (optional)

Method

  • In a jar combine the oats, coconut milk, coconut water, chopped date, cinnamon, maple syrup and place in the fridge overnight
  • When your ready to eat them, top with sliced banana, walnuts and bee pollen
