Paleo Grain & Refined Sugar Free ANZAC Biscuits

ANZAC Biscuits

I’ve always loved the taste of ANZAC biscuits but in the past I have steered away from them as they are loaded with sugar. This year I decided that I would try and make some paleo, grain and refined sugar free ones and I have to say I am VERY happy with how they turned out.

When I was making them I started thinking about the origin of ANZAC biscuits and what the story behind them was… Off I went onto Wikipedia and this is what I found:

Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I.

It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. Today, Anzac biscuits are manufactured commercially for retail sale.

Biscuits issued to soldiers by the Army, referred to as “Anzac tiles” or “Anzac wafers”, differ from the popular Anzac biscuit. Anzac tiles and wafers were hard tack, a bread substitute, which had a long shelf life and was very hard.

Ingredients

  • 3/4 cup almond meal
  • 1 1/4 cups shredded coconut
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup flaked almonds
  • 1/4 cup coconut oil
  • 1 tsp baking powder
  • 1 tbs water
  • 1/4 cup maple syrup or sweetener of choice

Method

  • Preheat oven to 150 degrees
  • Line a tray with baking paper
  • In a small pot, gently warm the coconut oil and maple syrup until it has melted and combined
  • Add the water and baking powder and mix together with a fork or whisk
  • In a bowl add the rest of the ingredients and mix in the coconut oil and maple syrup mixture
  • Roll tablespoons of the mixture in balls and then place on a tray- If you are having trouble getting them to form wet your hands a little and this will help the mixture stick together
  • Press down with the palm of your hand to flatten the biscuits
  • Place into the oven and bake for approx 30 minutes until golden brown. I like mine really golden and crunchy so baked them a little longer
  • Remove from the oven and allow to cool for 5 minutes on the tray then transfer to a cooling rack.
