Paleo Lemon Curd

Ingredients

1/2 cup maple syrup
lemon peel/zest of 2  lemons
125g  butter or coconut oil
3 large eggs or 4 small (180g in total)
150g (½ cup plus 1 tablespoon) freshly squeezed lemon juice (3-4 lemons)

Thermomix Method

  1. Add lemon peel, mill for 20 seconds on speed 10.
  2. Scrape down jug, add butter, maple syrup, eggs and lemon juice.  Cook for 20 minutes at 90°C on speed 2, without measuring cup.
  3. Insert measuring cup and mix for 1 minute at speed 9.  Pour into a hot jars and close immediately.  Cool completely before storing in the fridge.

Stovetop Method

  1. Whisk eggs and maple syrup in a saucepan until smooth, then place pan over a low heat. Add the butter, juice and zest and whisk continuously until thickened.
  2. Pour into a hot jars and close immediately.  Cool completely before storing in the fridge.

    Yum. I made it tonight as it was similar to my recipe I made in high school apart from the maple syrup instead of sugar (my recipe had sugar, but I used maple syrup). I used 4 eggs… don’t know if you would call them small though. Used 2 tsps. lemon zest and butter.
