Peanut Butter Brownie Bars

  • 1/2 cup (45g) walnuts
  • 1/2 cup (65g) almonds
  • 125g medjool dates (approx 7)
  • 2 tbs raw cacao powder
  • 100g dark chocolate (I use Loving Earth)
  • pinch of salt

Peanut Butter Topping

  • 1/2 cup peanut butter
  • 1/2 cup coconut oil
  • 1 tablespoon maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

  • In your thermomix or high speed food processor add the walnuts, almonds, dates, raw cacao powder, 50g dark chocolate and salt. Whizz on the highest speed until the mixture comes together and is not chunky (TM speed 10, 40 seconds)
  • Press silicone bar moulds and place in the freezer
  • Add the rest of the ingredients to your thermomix or high speed food processor and mix until combined (TM Speed 4. 10 seconds)
  • Pour on top of the brownie base and return to the freezer until set
  • Remove from freezer allow to soften for 10 minutes
