Salted Caramel Rocky Road Popcorn

I stumbled across a delicious looking Salted Caramel Popcorn recipe from the lovely Evelyn (@nourishnotpunish) and I was literally drooling over how good it looked.

I have tweaked the recipe a little and made this yummy Salted Caramel Rocky Road Popcorn.

Ingredients

  • 3 cups popped popcorn
  • 3 tablespoons coconut oil
  • 3 tablespoons maple syrup or sweetener or choice
  • 1 heaped tablespoon peanut butter
  • 1/4 tsp pink salt
  • 1/4 cup dry roasted peanuts
  • 1/2 cup shredded coconut
  • 1 tablespoon freeze dried pomegranate arils
  • 50g dark chocolate, melted

Directions

  1. Add the coconut oil to a small pan and heat until melted
  2. Add the sweetener and stir until combined
  3. Add the peanut butter and salt and stir.
  4. Take off the heat and pour over the popcorn in a large bowl.
  5. Add the peanuts, freeze dried pomegranate arils and shredded coconut and mix
  6. Pour into a tray that has been lined with baking paper
  7. Drizzle with melted chocolate and place in the freezer for half an hour.
  8. Remove from freezer, break into clusters and enjoy.
