Salted Caramel Rocky Road Popcorn
I stumbled across a delicious looking Salted Caramel Popcorn recipe from the lovely Evelyn (@nourishnotpunish) and I was literally drooling over how good it looked.
I have tweaked the recipe a little and made this yummy Salted Caramel Rocky Road Popcorn.
Ingredients
- 3 cups popped popcorn
- 3 tablespoons coconut oil
- 3 tablespoons maple syrup or sweetener or choice
- 1 heaped tablespoon peanut butter
- 1/4 tsp pink salt
- 1/4 cup dry roasted peanuts
- 1/2 cup shredded coconut
- 1 tablespoon freeze dried pomegranate arils
- 50g dark chocolate, melted
Directions
- Add the coconut oil to a small pan and heat until melted
- Add the sweetener and stir until combined
- Add the peanut butter and salt and stir.
- Take off the heat and pour over the popcorn in a large bowl.
- Add the peanuts, freeze dried pomegranate arils and shredded coconut and mix
- Pour into a tray that has been lined with baking paper
- Drizzle with melted chocolate and place in the freezer for half an hour.
- Remove from freezer, break into clusters and enjoy.
