Gluten Free Apple Crumble Cake

Who loves the sound of a healthy gluten free apple crumble cake?

People often ask how I come up with recipes and I think the main way I do is by thinking about a cake/dessert that I love to eat and then play around with the ingredients to take out all the nasty stuff like sugar and gluten.

Any dessert or cake with apple has always been a big hit for me. I love apple pie, apple crumble, apple tea cake and the list goes on….

So my mission was to create a healthy, gluten free apple crumble cake and the fact that there are only crumbs left in my kitchen, I think is a good indication that this was a winner.

Quite often I will stew apples and store them in the freezer ready to use for yummy apple desserts like this. You could also mix it up and use pears if you like.

 

Ingredients- Cake

  • 1/4 cup coconut flour
  • 1/4 cup almond meal
  • 2  teaspoons gluten free baking powder
  • 4  eggs
  • 1/4 cup maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1/3 cup  melted Coconut Oil
  • 1 tsp cinnamon
  • 2 apples, peeled, cored and sliced

Ingredients- Crumble

  • 1/2 cup almond meal
  • 2 tbs Coconut Oil (make sure it is not melted)
  • 2 large medjool dates, pitted
  • 1/4 cup raw walnuts

 

Method

  • Preheat oven to 160 degrees
  • Line a small cake pan (approx 15 cm in diameter)
  • In a small bowl add the apples with a few tablespoons water, cover and microwave for 3 minutes until they are soft. Drain liquid and set aside
  • Combine  coconut flour, almond meal, baking powder, coconut oil, eggs, cinnamon, sweetener and vanilla extra  in a Thermomix (TM speed 5 for 10 seconds) or food processor
  • Pour into lined baking tin
  • Top with stewed apples
  • In your Thermomix (speed 7, 3 seconds) or food processor combine crumble ingredients until they come together but are still lumpy.
  • Crumble over the apple mixture
  • Bake for 1 h 30 mins or until an inserted skewer comes out clean (if the top gets to golden before the cake is cooked simply place a piece of alfoil on top to stop it browning any more)
  • Remove from the oven and allow to cool or you could also eat it warm 🙂

    Hi, I have cooked this a couple of times and just recently in a new oven… can you tell me whether the 160 degrees temp is for a fan forced oven or non fan forced? Love this cake BTW
