Cacao Vanilla Cream and Blood Orange Tarts
Ingredients
- 1/2 cup raw cashews
- 1/2 cup dessicated coconut
- 5 medjool dates , pitted
- 3 tbs Raw Cacao Powder plus extra for dusting on top
- 1/2 tsp vanilla extract
- A pinch of Himalayan salt
- Zest from one blood orange (Thermomix owners see note below)
- 1 can coconut cream
- 1 tsp vanilla extract
- Seeds from 1 pomegranate
Method
- Add dates, raw cacao, orange zest/oil & salt to your Thermomix or food processor and whizz until combined and sticky (TM speed 8, 15 seconds)
- Press mixture into small tart tins or alternatively line muffin tins with cling wrap
- Combine coconut cream with the vanilla extract (TM Speed 4, 10 seconds)
- Pour into the tarts and place in the freezer for 1 hour or overnight
- Remove from freezer 30 minutes before eating, top with pomegranate seeds and dust with raw cacao powder.
Notes
Peel zest off the orange with a potato peeler. Place in your bowl and whizz for 30 seconds on speed 10.
