Carrot Cake Overnight Oats
I love carrot cake and I love oats, so what better things to do than combine the flavours together to create these delicious, nutritious and super quick carrot cake overnight oats.
Place all the ingredients in a jar, mix it all around and store in the fridge for the next days breakfast, lunch or snack!
Ingredients
Serves 1
- 1/2 cup oats (I use Bobs Red Mill Gluten Free Oats)
- 1/4 cup coconut milk or coconut cream (I use Honest to Goodness as their cans are BPA free)
- 1/4 cup Natural Raw C Coconut Water
- 1 medjool date, pitted and chopped
- 1 tsp maple syrup or sweetener of choice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- A few walnuts chopped
- 1/2 a small carrot grated
- Extra Coconut milk or coconut cream for drizzling on top
Method
- In a jar combine the oats, coconut milk, coconut water, chopped date, cinnamon, maple syrup and carrot and place in the fridge overnight
- When your ready to eat them, top with chopped walnuts and extra coconut milk.
