Chunky Vegetable Soup

One of the best things about winter is soup! I love making big bathes of soup filled with lots of different vegetables.

This chunky vegetable soup is pretty much a chuck in whatever veggies you have in the freezer and off you go… If you don’t have carrots use something else and so on. Easy Peasy

Ingredients

  • 2 carrots, peeled and roughly chopped
  • 3 stalks celery, roughly chopped
  • 1 potato or sweet potato, peeled and roughly chopped
  • 5 stalks of silverbeet, roughly chopped
  • 800g canned tomato or chopped fresh tomato’s
  • 400g can 4 bean mix, drained
  • 3 cups water or vegetable stock (or 1 tablespoons Thermomix Vegetable Stock)
  • 1 tsp Italian spices

Directions

  1. Add ingredients to a large pot and bring to the boil
  2. Reduce to simmer for 30 minutes or until vegetables are soft
