Chunky Vegetable Soup
One of the best things about winter is soup! I love making big bathes of soup filled with lots of different vegetables.
This chunky vegetable soup is pretty much a chuck in whatever veggies you have in the freezer and off you go… If you don’t have carrots use something else and so on. Easy Peasy
Ingredients
- 2 carrots, peeled and roughly chopped
- 3 stalks celery, roughly chopped
- 1 potato or sweet potato, peeled and roughly chopped
- 5 stalks of silverbeet, roughly chopped
- 800g canned tomato or chopped fresh tomato’s
- 400g can 4 bean mix, drained
- 3 cups water or vegetable stock (or 1 tablespoons Thermomix Vegetable Stock)
- 1 tsp Italian spices
Directions
- Add ingredients to a large pot and bring to the boil
- Reduce to simmer for 30 minutes or until vegetables are soft
