Coconut and Lemon Bliss Balls
These lemon and coconut bliss balls are great as snack when you craving something sweet.
They are a great way to use up the leftover pulp from home made almond milk. I find that when I am making almond milk every week, I end up with stacks on almond pulp and it just seems like such a waste to throw away so this recipe is perfect.
Ingredients
- 2 cups coconut
- ½ cup almond pulp or almond meal
- 3 tbsp. maple syrup or sweetener of choice
- 2 tbsp coconut oil
- Zest and juice of one small lemon
Method
- Place all ingredients into your Thermomix, food processor or blender and mix until combined
- Roll into balls and then roll in desiccated coconut to coat them
- Place in the freezer for 30 minutes until set
- Once set these can be kept in the fridge
- Note- Almond pulp is the leftovers you get from making almond milk
