Date and Banana Muffins

These muffins are gluten free, sugar free, paleo friendly and absolutely delicious. They are naturally sweetened with banana’s and dates and are perfect to freeze individually and pull out for kids lunchboxes or to take to work for a guilt free afternoon snack.

Ingredients

  • 4 Eggs
  • 2 large or 3 small banana’s- the riper the better but do not be tempted to add more banana than stated as it will make the muffins soggy
  • ¼ cup melted coconut oil
  • ½ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tbs maple syrup
  • 6 medjool dates (pitted)
  • Optional Topping- 1/3 cup crushed walnuts and 1 medjool date (diced)

Method

  • Preheat oven to 200 degrees
  • Soak dates in boiling water for 5 minutes then drain
  • Put all ingredients into the Thermomix or food processor and mix until smooth.
  • Spoon into 9 lined muffin tins
  • Optional- Sprinkle with toppings and press them in a little to make sure they stick
  • Bake for 24 minutes until a skewer inserted in the middle comes out clean
  • Allow to cool for 5 minutes in the pan and then transfer to a cooling rack
