DIY Rice Paper Rolls

This is one of my  favourite dinners as I just love putting together a huge platter of goodies and having my friends and family sit around a table and go crazy making their own rice paper roll creations.

You can cut everything up in advance so you just have to pull the platter out of the fridge and dinner is ready to go.

These make a great option for dinner and are great for your work lunch the next day or even the kiddies lunchbox.

 

Ingredients

  • 1 carrot, peeled and cut into thin sticks
  • 1 cucumber, peeled and cut into thin strips
  • 1 Avocado, peeled and cut into thin strips
  • 1 mango, peeled and cut into thin strips
  • 1/2 iceberg lettuce, shredded
  • 1 bunch Vietnamese basil, washed
  • 200g peeled, uncooked prawns
  • 1 tbs coconut oil
  • Salt and pepper
  • Juice of 1 lime
  • 1/2 cup Tamari
  • 1/2 cup dry roasted peanuts
  • 1 packet of round rice paper wrapper

Method

  1. In a fry pan place coconut oil and turn heart to medium
  2. Add prawn, season will salt and pepper and fry for 1 minute each side
  3. When they are almost done, add the lime juice
  4. Set aside
  5. Fill a small ball with the tamari and sprinkle with the chopped peanuts
  6. On a large platter, arrange the vegetables,prawns and dipping sauce
  7. Boil some water and place in a shallow bowl that is big enough to fit a rice paper sheet
  8. Soften rice paper as per instructions on the packet
  9. Fill with ingredients, roll them up nice and tight and devour!
