Fig, Goats Cheese and Walnut Salad


The combination of fresh figs, goats cheese and walnuts is out of this world!!!! This salad is sure to impress friends and family 🙂

Serves 4


  • 6 figs cut into quarters
  • 1 large avocado or 2 small ones cut into chunks
  • 4 handfuls of spinach
  • 2 Lebanese cucumber peeled and cut and diced
  • 1/2 cup crushed roasted walnuts (see below for how to roast them)
  • 150g goats cheese (my favourite is Meredith Dairy Goats Cheese)
  • Drizzle of olive oil for dressing
  • Salt and pepper


  • In a large salad bowl or 4 individual bowls add the spinach leaves then top with figs,  avocado and cucumber
  • Sprinkle with roasted walnut and crumble over goats cheese
  • Drizzle with olive oil and season with salt and pepper

Crushed roasted walnuts- Preheat oven to 200 degrees. Place nuts on a tray and roasted for approx. 5 minutes (check every few minutes as they do turn from golden to burnt in a matter of seconds). Remove from oven and let them cool for a few minutes then chop finely with a sharp knife.
