Gluten Free Seed Crackers

These gluten free crackers are delicious, nutritious, filling and versatile. Top with a little cottage cheese and tomato for an afternoon snack, use an an accompiament to dips or just eat them on their own.

Ingredients

  • 1 cup water
  • 1/2 cup flax seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1/2 tsp salt

Method

  • Preheat oven to 175 degrees
  • Combine all ingredients in a bowl and let sit for 10 minutes so mixture swells and the consistency is jelly like
  • Spread as thinly as possible on a tray lined with baking paper
  • Bake for 30 minutes
  • Remove from oven and cut into pieces using a pizza cutter or sharp knife
  • Flip pieces over and return to the oven for 30 minutes to crisp up on the other side
  • Store in an airtight container once cooled.
