Sweet Potato and Salmon Patties

These little gluten free sweet potato and salmon patties are packed with nutritious ingredients and protein to keep you feeling full.

This is real budget friendly recipe which I made  for my family and they were a huge hit with my 9 month old too.

I don’t know about you but I love being able to make a meal and store leftovers in the freezer for when I cant be bothered cooking and these are perfect for just that!

Ingredients

  • 1 sweet potato, peeled and cut into chunks
  • 1 400g can of salmon
  • A large handful of parsley
  • 2 eggs
  • 2 tbs coconut flour
  • Salt and pepper
  • 2 tablespoons coconut oil for frying

Thermomix Method

  1. Fill bowl with 1 litre of water
  2. Place sweet potato in the simmering basket , insert it into the bowl and put the lid on
  3. Cooks for 20 mins on Varoma speed 3
  4. Remove simmering back, empty out the water and dry the bowl
  5. Add the parsley and whizz for 6 seconds, speed 7
  6. Add the rest of the ingredients including the sweet potato, whizz on reverse speed 2 for 6 seconds
  7. Heat coconut oil in a fry pan on medium heat
  8. Form into pattie shapes, place in the pan and cook until golden on each side

Non Thermomix Method

  1. Fill a pot with water,
  2. Place sweet potato in the steamer pot and steam for 20 mins on medium heat (alternativly cook the sweet potato in the microwave until tender)
  3. Chop parsley finely
  4. Add all ingredients into a bowl or food processor and mix until combined.
  5. Heat coconut oil in a fry pan on medium heat
  6. Form into pattie shapes, place in the pan and cook until golden on each side
