Healthy Snickers Bar

Soooooo we all love a sneaky Snickers bar every now and again, but what if I told you that I had created a healthy version that is full of good fats, without refined sugar and tastes almost bang on like the real deal…

This Snickers Bar recipe is hands down when of my favourite recipes so far.

Soft creamy vanilla nougat topped with salted caramel and chopped up nuts then slathered in chocolate. I can almost see you drooling through the screen.

I promise you these Healthy Snickers Bars with be a crowd favourite!

Ingredients

Nougat Base

  • 1 cup cashew butter
  • 2 tsp coconut flour
  • 2 tsp maple syrup
  • pinch of salt
  • 1 tsp vanilla extract

Caramel Topping

  • 3/4 cup medjool dates, pitted and soaked in boiling water for 10 minutes then drained
  • 1 tsp vanilla extract
  • 1/3 cup water
  • 1/2 tsp salt
  • 1 tbls coconut oil
  • 2 tbls peanut butter

Topping

  • 1/3 cup chopped dry roasted almonds or peanuts
  • 80g Melted Dark Chocolate ( I use Loving Earth Dark Chocolate) or you could use Loving Earth Coconut Mylk Chocolate if you prefer a milkier chocolate

Directions

  1. Add all base ingredients to your Thermomix or high speed food processor and blitz until well combined and smooth (TM Speed 4, 15 secs)
  2. Pour into a bar tin lined with baking paper (my tin was 6 cm x 20cm)
  3. Place into the freezer
  4. Place all caramel ingredients into your Thermomix or high speed food processor and blitz until smooth (TM 1.5mins speed 6), you make need to stop and scrape down the bowl a few times
  5. Pour over the nougat base and sprinkle the nuts on top
  6. Use your hands to press the nuts into the caramel
  7. Return to the freezer for 1 hour
  8. Remove from freezer and cut into bars
  9. Dip each bar into melted chocolate and return to the freezer to set
