Healthy Twix Bars
Ingredients
Base
- 2 cups cashews
- 1/2 tsp salt
- 2 tsp maple syrup
- 1 tsp vanilla extract
- 1 tbls coconut flour
Caramel
- 3/4 cup dates, soaked in hot water for 10 mins and then drained
- 2 tbls peanut butter
- 1 tbls coconut oil
- 1/2 tsp salt
- 1/3 cup water
Chocolate Coating
- 2 block dark chocoalte (I use Loving Earth Mylk or Dark Choc), melted
Directions
- Add all base ingredients to your Thermomix or food processor and blitz until the mixture just comes together and can be pressed together between your fingers (TM speed 7, 20 seconds)
- Press into a lined slice tin and place in the freezer
- Add all caramel ingredients to your blender, food processor or Thermomix and blitz until smooth and combined (TM speed 5, 1 minute). You may need to stop and scrape down the bowl a few times
- Pour on top of the base and return to the freezer to set for 1 hour
- Once the caramel has set, cut into bars, dip into melted chocolate and return to the freezer until the chocolate has set
