Pumpkin Seed Butter
Following a predominatley plant based diet I am always trying to ensure that I am getting enough protein in my diet. As pumpkin seeds are super high in protein they make a great addition to any diet and have the added advantage of keeping you nice and full.
This pumpkin seed butter is so versatile and is delicious spread on toast or crackers, stirred through yogurt, drizzled onto salads or as a dip for veggie sticks.
Ingredients
- 1 cup pumpkin seeds
- 3 tbs coconut oil
Method
- Whizz pumpkin seeds in your Thermomix or high speed blender until they are ground up
- Add the coconut oil and whizz for a couple of minutes until a smooth spreadable consistency is acheived. You may need to scrap down the bowl a few times throughout the process.
