Raw Chocolate Walnut Brownie Donuts

Ingredients

  • 1/2 cup (45g) walnuts
  • 1/2 cup (65g) almonds
  • 125g medjool dates (approx 7)
  • 2 tbs raw cacao powder
  • 100g dark chocolate (I use Loving Earth)
  • pinch of salt
  • 100ml coconut cream
  • 1/4 cup walnuts, chopped

Method

  • In your thermomix or high speed food processor add the walnuts, almonds, dates, raw cacao powder, 50g dark chocolate and salt. Whizz on the highest speed until the mixture comes together and is not chunky (TM speed 10, 40 seconds)
  • Press into donut moulds and place in the freezer
  • If you have a Thermomix TM5 add the rest of the chocolate and whizz on speed 10 for 10 seconds, add the coconut cream and cook for 4 minutes, 40 degrees,speed 1.5)
  • If you don’t have a thermomix, warm the coconut cream in a small pot on very low heat then add the chocolate (chopped up)  and whisk until melted and combined.
  • Remove donuts from the moulds once set, dip in chocolate ganache and sprinkle with chopped walnuts
