Raw Peppermint Aero Slice

I did a Thermomix demo for a customer and she was telling me about a peppermint slice she made, it gave me instant cravings!! I rushed home and played around with a few ingredients and whipped up this slice and boy is it amazing!

The combination of the chocolate biscuit base, crunchy buckini layer, creamy peppermint and  dark choc is soooooo good. I literally sat there cutting slice after slice off and eating it.

If you like mint Aero bars then you will love this Raw Peppermint Slice too.

 

Ingredients

Base

  • 1/2 cup raw cashews
  • 1/2 cup desiccated coconut
  • 4 medjool dates, pitted
  • 2 tablespoons raw cacao powder
  • Pinch salt

Filling

  • Flesh of 1 avocado
  • 1/2 cup desiccated coconut
  • 5 drops peppermint oil
  • 2 tablespoons maple syrup or sweetener of choice
  • 1/3 cup coconut oil
  • 1/2 cup cashews (soaked for 1 hour in hot water)

Buckini Layer

  • 1/4 cup buckini’s

Topping

  • 1 block of dark chocolate, melted- I use Loving Earth Coconut Mylk chocolate. If you like it extra minty use the Choc mint flavour
  • 1 tablespoon coconut oil, melted

Directions

  1. Add all base ingredients to your Thermomix of food processor and blitz until sticky (TM speed 7, 15 seconds)
  2. Press into a slice tin that has been lined with baking paper (approx 17cm x 12cm)
  3. Add all filling ingredients to your Thermomix, food processor or high speed blender and mix until smooth. This can take a little while and you may need to stop and scrape down the bowl a few times (TM speed 7, 1 minute)
  4. Sprinkle with the buckinis
  5. Place into the freezer to set
  6. Mix together melted chocolate and melted coconut oil and pour over the filling.
  7. Return to the freezer until set and then cut into slices and store in the fridge or freezer.
