Raw Peppermint Aero Slice
I did a Thermomix demo for a customer and she was telling me about a peppermint slice she made, it gave me instant cravings!! I rushed home and played around with a few ingredients and whipped up this slice and boy is it amazing!
The combination of the chocolate biscuit base, crunchy buckini layer, creamy peppermint and dark choc is soooooo good. I literally sat there cutting slice after slice off and eating it.

Ingredients
Base
- 1/2 cup raw cashews
- 1/2 cup desiccated coconut
- 4 medjool dates, pitted
- 2 tablespoons raw cacao powder
- Pinch salt
Filling
- Flesh of 1 avocado
- 1/2 cup desiccated coconut
- 5 drops peppermint oil
- 2 tablespoons maple syrup or sweetener of choice
- 1/3 cup coconut oil
- 1/2 cup cashews (soaked for 1 hour in hot water)
Buckini Layer
- 1/4 cup buckini’s
Topping
- 1 block of dark chocolate, melted- I use Loving Earth Coconut Mylk chocolate. If you like it extra minty use the Choc mint flavour
- 1 tablespoon coconut oil, melted
Directions
- Add all base ingredients to your Thermomix of food processor and blitz until sticky (TM speed 7, 15 seconds)
- Press into a slice tin that has been lined with baking paper (approx 17cm x 12cm)
- Add all filling ingredients to your Thermomix, food processor or high speed blender and mix until smooth. This can take a little while and you may need to stop and scrape down the bowl a few times (TM speed 7, 1 minute)
- Sprinkle with the buckinis
- Place into the freezer to set
- Mix together melted chocolate and melted coconut oil and pour over the filling.
- Return to the freezer until set and then cut into slices and store in the fridge or freezer.
