Warming Coconut Porridge

There is nothing better on a cold winters morning to fill your belly with a warming bowl and porridge. There is something so comforting about eating porridge!!!

 

Ingredients
Serves 1

  • 2/3 cup (60g) oats (I use Bobs Red Mill Gluten Free Oats)
  • 1/3 cup coconut milk ( I use Honest to Goodness as their cans are BPA free)
  • 3/4 cup water
  • 1/2 mashed ripe banana
  • 1 tbs coconut oil (optional)
  • 1 tbs almond or peanut butter

Topppings

  • 1/2 sliced banana
  • Flaked coconut
  • 1 tsp maple syrup or sweetener of choice
  • Extra coconut milk (optional)
  • Bee Pollen (optional)

Thermomix Method

  • Place all porridge ingredients in your Thermomix and set for 10 mins, 90 degrees, speed 2
  • Add the coconut oil and nut butter and mix on reverse speed 3 for 5 seconds
  • Pour into a bowl and top with sliced banana, coconut flakes, sweetener and the optional extra coconut milk and bee pollen

Stove Top Method

  • Place all porridge ingredients in a small pot
  • Heat for approx 10 minutes on a medium/low flame, stirring continuously into liquid has absorbed and porridge is creamy
  • add the coconut oil and nut butter and stir until combined
  • Pour into a bowl and top with sliced banana, coconut flakes, sweetener and the optional extra coconut milk and bee pollen
