Warming Coconut Porridge
There is nothing better on a cold winters morning to fill your belly with a warming bowl and porridge. There is something so comforting about eating porridge!!!
Ingredients
Serves 1
- 2/3 cup (60g) oats (I use Bobs Red Mill Gluten Free Oats)
- 1/3 cup coconut milk ( I use Honest to Goodness as their cans are BPA free)
- 3/4 cup water
- 1/2 mashed ripe banana
- 1 tbs coconut oil (optional)
- 1 tbs almond or peanut butter
Topppings
- 1/2 sliced banana
- Flaked coconut
- 1 tsp maple syrup or sweetener of choice
- Extra coconut milk (optional)
- Bee Pollen (optional)
Thermomix Method
- Place all porridge ingredients in your Thermomix and set for 10 mins, 90 degrees, speed 2
- Add the coconut oil and nut butter and mix on reverse speed 3 for 5 seconds
- Pour into a bowl and top with sliced banana, coconut flakes, sweetener and the optional extra coconut milk and bee pollen
Stove Top Method
- Place all porridge ingredients in a small pot
- Heat for approx 10 minutes on a medium/low flame, stirring continuously into liquid has absorbed and porridge is creamy
- add the coconut oil and nut butter and stir until combined
- Pour into a bowl and top with sliced banana, coconut flakes, sweetener and the optional extra coconut milk and bee pollen
