Banoffe Brownie Bites

I’m a little embarrassed to admit this, but I actually only recently realised what banoffe stood for… Banana Toffee!! Two amazing flavours combined mmmm

Ingredients

  • 3/4 cup (70g) almond meal
  • 2 tbs melted coconut oil
  • 1/3 cup (30g) raw cacao powder
  • 1/3 cup (110g) Maple syrup or sweetener of choice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup (125g) peanut butter

Caramel

  • 3/4 cup medjool dates, pitted and soaked in boiling water for 10 minutes then drained
  • 1 tsp vanilla extract
  • 1/3 cup water
  • 1/2 tsp salt
  • 1 tbls coconut oil
  • 2 tbls peanut butter

Topping

  • 2 banana’s, sliced
  • 50g dark chocolate melted ( Iuse Loving Earth Dark Chocolate which is free from any refined sugar)

Directions

  1. Preheat oven to 160 degrees and line and square 9 inch tin with baking paper
  2. Add all ingredients to your Thermomix or food processor and whizz until just combined (TM Speed 4, 10 seconds)
  3. Pour mixture into the pan
  4. Place in the oven and bake for 12-15 minutes or until the edges have set but the centre is still a little fudgey
  5. While the brownies are cooking combine all caramel ingredients in your Thermomix, food processor or blender and whizz until smooth (TM Speed 6 then reduce to speed 4 for about 1 minute). You may need to scrape down the bowl a few times
  6. Once brownies have cooled, removed from pan and use a circle cutter or just roughly cut small circles about the size of a 20 cent coin
  7. Top each circle with a teaspoon of caramel, a slice of banana and a drizzle of melted chocolate
  8. Serve immediately

You may have some caramel left over which you can store in the fridge and use as a topping on fruit, stirred through porridge or maybe even to make some of my Caramel cups
